FYI MATLAB isn't natively supported on Apple's new ARM chips yet. It runs through the Rosetta translation environment which may be why you're seeing poor performance compared with your iMac which runs on Intel processors. I don't run MATLAB on a Mac, but I wouldn't think the M1 Max would be much better than the M1 Pro.
