It really depends on taste, because there are a crapload of good single player games for PC, especially if you are willing to try indie games. As far as indie titles go Bastion and Transistor are pretty good action games that are known for decent stories. The Walking Dead games by Telltale have a good story.

My favorite FPS games are borderlands 2 and destiny 2. They aren’t single-player only games, but they can definitely be played solo. Subnautica is a great survival game with building mechanics. It’s not as intricate as terraria or Minecraft but you can build your own home in under the sea and exploring is great.
